Larabars are one of my go-to picks when I’m traveling and I keep extras in my desk, purse, and even my toiletry kit. Why? Simple, clean, whole food ingredients. They’re the perfect little energy boost and super tasty.
Since I love them so much I decided to try making my own version to keep at home. This recipe is allergy friendly {Vegan, Gluten-Free & Paleo}, plus it’s raw, easy to make, and – Most importantly – Delicious!
Makes:
6-8 Bars depending on size
Time:
8-10 Minutes of preparation and no cooking time!
Ingredients:
- 8oz Pitted Dates
- 1/2 Cup Almonds {Or other nut if you have an allergy or don’t have almonds on hand}
- 1/4 Teaspoon Salt
- 1/4 Cup Chocolate/Carob Chips
- 1/4 Cup Slivered Almonds
Directions:
- Combine dates & nuts in a food processor – Blend until a paste-like substance begins to form
- Add salt and blend until the consistency begins to resemble dough
- Add half of the chocolate chips & pulse a few times
- Line a baking sheet with parchment paper or tin foil
- Drop the dough onto the sheet and press dough down into a square or rectangle shape {Aim for 3/4-inch thick – Though it’s really about your person preference}
- Drop remaining chocolate chips & silvered almonds on top, press gently into dough
- Cut into bars or squares
