While I may not be a card-carrying member of the ‘superfoods’ bandwagon, I am a big fan of including nutritious ingredients in my recipes when I cook and bake. And, as fate would have it, many of those nutritious ingredients happen to be celebrated superfoods.
Case and point? The feisty little chia seed.
These nutritious little powerhouses, indigenous to Mexico & Central America, are rich in Omega-3 fatty acids, B Vitamins, calcium, magnesium, iron, and zinc. Call them what you will, these are a super healthy addition to any balanced diet.
And yes, I’ll admit that my love affair with chia seeds may have begun when I read Born to Run and learned all about Tarahumara runners using them as fuel for long distance runs. Something nutritious enough to sustain the human body during mile after mile of punishing runs in the Sierra Madre mountains? Yes, I’ll try those!
So how do I usually incorporate them into my diet? Overnight oats, chia seed pudding, smoothies, and pre-run energy shots.
