MCLV Mange: Healthy Apple Crumble

When Stemilt – A family run fruit farm – Reached out and asked if I was interested in trying their new apple variety, all I could picture was baking a health apple crumble.

The SweeTango is the successor to Honeycrisp apples, and man did they live up to the hype!! Sweet, but tangy, and super crunchy. I had trouble saving enough to play around with some new recipes!

First up, I made a Fall favorite – A healthy twist on a traditional apple crumble.

{Vegan // Vegetarian // Gluten-Free // Paleo-Friendly}

Healthy Apple Crumble

Apple Ingredients:

  • 4-5 Apples
  • 1 Tsp of Lemon juice
  • 2 Tsp of Maple Syrup
  • 2 Tsp of Cinnamon
  • 3 Tbsp of Water

Crumble Ingredients:

  • 1.5 Cups of almond meal {Any gluten-free flour could work or a combo}
  • 1 Tsp of Cinnamon
  • 1/4 Tsp of Salt
  • 1/4 Cup of Coconut oil
  • 1/4 Cup of Maple Syrup
  • Optional: Add 1/2 cup of chopped nuts for an added crunch

Note: I made two versions of this, one with flour and one with oats, the latter being my usual go-to. And, to my surprise, the boyfriend’s favorite was hands down the one with flour. If you’d prefer to try oats, use 1 cup of oats and 1/2 cup of gluten-free flour.

Directions:

  • Pre-heat oven to 350
  • In a large mixing bowl toss the chopped apples with lemon juice, maple syrup, cinnamon, and water. Then pour into a greased 9×9 baking pan.
  • Use the now empty cinnamon-y bowl to mix together the flour/oats, cinnamon, salt, coconut oil, maple syrup, and nuts if desired. Mix until the liquids are absorbed and you’ll get a sticky dough-like substance. Pour over the apples, or use your fingers to crumble and drop the topping onto the apples.
  • Bake at 350 for 40-45 minutes until the apples reach your desired texture. If the top of the crumble starts to look too brown, you can cover the pan loosely with a piece of aluminum foil for the final ~10 minutes.

Give Me the Pumpkins and Nobody Gets Hurt

So… In case that title was too subtle for you, I’m here to talk about pumpkins. Namely – Eating them.

I may not run off to Starbucks for pumpkin spice lattes, in fact I’ve never even had one and can’t remember the last time I went to Starbucks, but I do love all things pumpkin.

Partially because I adore Fall, and pumpkins are ubiquitous to Fall. And the other part is that they’re just plain delicious. And it also makes a great filler in recipes to keep your baking healthy and flavorful.

In short – Pumpkins are awesome.

Every year I have a few favorite recipes that I immediately rush to make, but I also love spending some quality time on Pinterest looking for new ideas. And yes, obviously I made a new Fall Pinterest Board.

So here are a few of the new pumpkin recipes that I’m super, super excited to try out this Fall. I may even be making one right now. You never know.

Easy Prep:

These are the snacks that you can prep in advance or whip up quickly, which are perfect for road trips or if you have access to a kitchen at your office or in your hotel room.

No Prep:

When I’m traveling or running around town these are my go-to snacks at your local corner store/drug store.

  • Nuts, seeds, or trailmix – Go for raw, not roasted or sugar-coated
  • Larabars – My favorite kind of bar between the ingredients are the cleanest I’ve ever seen for processed food!
  • Fruit – Most stores will have bananas or apples, or you can grab a bag of raisins
  • Rice, Pop, Black Bean, Chickpea, Sugar Snap Pea, or Sweet Potato Chips – Check the ingredients for the least amount of sugar available

MCLV Mange: Vegan Buddha Bowl

One of the oh-so-gorgeous Instagram trends right now are the veggie and protein-filled Buddha bowls. What I love about these tasty bowls is that not only are they beautiful, but they’re easy to make & incredibly healthy.

You can add whatever you have in your fridge for a tasty combination of nutrient-dense produce, protein, and fiber.

Read on for one of my favorite Fall combinations!

Buddha Bowl Plant-Based Diet Gluten-Free Paleo Vegan Bay Area San Francisco Fashion Food Fitness Lifestyle Blogger

Ingredients:

  • Sautéed green beans {coconut oil + green beans = heaven}
  • Tomato & bean salad {recipe coming soon!}
  • Sautéed sweet potatoes*
  • Cubed tofu

*I adore sweet potatoes so when I get a few I cube them and boil to soften. From there you can stick them in the fridge in Tupperware and use them for al sorts of delicious recipes. This type is perfect as a side for dinner or even with eggs for breakfast. Just throw some coconut oil on a pan, heat, and sauté until you achieve your desired consistency.

Directions:

  • Add ingredients to bowl
  • Eat!
