MCLV Mange: Simple Summer Salad

I crave light, easy foods during the Summer.

I don’t want the stove or oven to be on and heating up the apartment. I don’t want to run all over town looking for ingredients. And I don’t want to spend hours in the kitchen preparing dinner.

Enter my favorite simple Summer salad – Crisp, flavorful produce, quick to make, and the best part, it’ll easily last a few days in the fridge.

Simple Summer Salad

Salad Ingredients:

  • 1 Cucumber
  • 1 Pepper
  • 2 Medium tomatoes {I like heirloom} or a handful of cherry tomatoes
  • 1 Bell Pepper
  • 1/2 Red Onion
  • Optional: Basil

Dressing Ingredients:

  • 2 Tablespoons of Olive Oil
  • 1 Tablespoon of Red Wine Vinegar
  • Salt & Pepper


  • Chop veggies
  • Whisk together dressing ingredients
  • Mix together & stir
  • Store the leftovers in an airtight container for 2-3 days

MCLV Mange: Vegan Chopped Taco Salad

Time to revamp the sadly neglected MCLV Mange series!

I’ve been cooking up a storm lately and sharing my creations on Instagram and Snapchat – So it’s time to give the blog a little culinary love.

Let’s start this off with an easy-to-make but delicious and satisfying salad.

I go through phases with salads – Sometimes I crave them daily and can’t get enough. And… Sometimes a salad sounds like a terrible waste of dinner.

I’m back in my “gimme gimme” stage with salads though and this avocado-based dressing is a big part of that. This salad is filled with vitamin packed produce, protein, and healthy fats.

Vegan Chopped Taco Salad Nutrient-Dense Salad Vegetarian Gluten-Free Paleo San Francisco Bay Area Fashion Food Fitness Lifestyle Blogger Recipe

Vegan Chopped Taco Salad {Serves 2}

Salad Ingredients:

  • Romaine lettuce
  • 2 Peppers
  • Handful of cherry tomatoes
  • 1 cup of black beans
  • 1/2 red onion
  • 1/2 avocado

Optional: Add additional protein – Crumbled veggie burger, tofu, tempeh etc.

Dressing Ingredients:

  • 1/2 avocado
  • 2 tbsp olive oil
  • 1/3 cup water
  • 1 tbsp lime juice
  • 1/4 tsp cumin
  • Salt & pepper to taste


  • Chop veggies and add to your bowl(s)
  • Top salad with black beans
  • Blend salad dressing ingredients in a food processor or with an immersion blender until smooth, add water, salt & pepper as needed
  • Pour over salad and enjoy!

Note: This dressing is killer! You can double the recipe and save the remainder in an air tight container for 2-3 days.

MCLV Mange: Hemp Salad

As I mentioned in my July Round-Up post my friend Arianna and I have gotten back into the habit of having a healthy dinner once a week. She walks over after work and we chat and catch up while I throw something together, usually based on what I was able to find at the Farmers Market the previous weekend.

For this dish I was initially inspired by the amazing OhSheGlow’s Speedy Summer Hemp Power Salad but my food processor was having none of it so I ended up just using the veggies that I had on hand and topping them with a handful of hemp seeds and my current obsession – Trader Joe’s Spicy Peanut Dressing.

And of course I had seconds…

And then there was dessert in the form of Purely Twins’s (formerly Pure 2 Raw) Hemp Protein Muffins made with Sun Warrior Protein Powder in chocolate flavor instead of hemp-based protein powder.

Super quick and easy, only a few ingredients, and the end result was, despite the less than flattering exterior, dense and chewy. You could tell that they were “healthy” and made with protein powder so I’m going to try to tweak the recipe in the future, but I enjoyed them.

And a second dessert of vegan chocolate ice cream made simply with blended frozen bananas, a splash of vanilla extract, and some raw cacao powder.


I have to admit, I think that both of these desserts probably deserve their own separate post… Oh well, I guess that means that I’ll have to make them again!
