After my peanut butter cookie triumph I wanted to try another holiday classic to add to my menu for this season – Vegan Snowball Cookies. They’re another quick & easy recipe that’s super delicious and they come out really cute. The perfect cookie for a cocktail or holiday party, or for dropping off with friends or neighbors in a sweet little tin.
Ingredients:
- 1/2 Cup Applesauce
- 1/4 Cup Coconut Oil
- 1/4 Cup Sugar
- 1/4 Teaspoon of Sea Salt
- 2 Cups of Flour {almond meal, gluten-free flour, cashew flour…}
- Optional: Add carob chips, chocolate chips, almond slivers, crushed walnuts, pecans…
Directions:
- Set oven to 325
- Mix dry ingredients
- Blend the wet ingredients and add to the dry
- Add any extras like nuts or chocolate chips
- Shape dough into walnut sized balls & place on an oiled cookie sheet or parchment paper
- Bake for ~20 minutes until bottoms are browning & let cool on a cookie sheet
