Thanksgiving: Vegan & Gluten-Free Recipe Round-Up

Thanksgiving, more so in my mind than any other holiday, is really food-centric. Family is the best part of any holiday, but when I think of Thanksgiving, I think of food! For my plant-based folks out there, here’s a round-up of delicious, healthy recipes to meet all of your needs – Vegan/vegetarian and gluten-free. Enjoy!

Appetizers:

  • Roasted Apple Pumpkin Soup – Nothing beats a hearty soup on a cold day. Check out this colorful and delicious recipe from As Easy As Apple Pie.
  • Stuffed Acorn Squash – These amazing little squash bites are the perfect combo of ingredients. So head over to Abbey’s Kitchen to see more!
  • 5-Minute Savory Pumpkin Hummus – Quick, delicious, and perfect for dipping. Two Healthy Kitchens knows what we need.

{Stuffed Acorn Squash}

Sides:

  • Sweet Potato Unstuffing – Because The Real Food Dietitians know that you don’t need bread for an amazing stuffing recipe!
  • Crispy Garlic Smashed Baby Potatoes – I’m a big fan of including as many potato recipes as possible in any meal. 馃檪 Clearly Yay for Food agrees.
  • Maple Glazed Heirloom Carrots – These carrots from Eye Candy Popper, with an amazing lemon cashew cream, are the perfect accompaniment to any Thanksgiving dinner.

Entrees:

  • Lentil Loaf with Classic Brown Onion Gravy – Lentils, veggies, and gravy. Oh my!! This dish from the Mostly Vegan looks like a winner. May need to try it out before the holiday!
  • Vegan Pot Pies – I have to confess that I’ve never had a pot pie, so I’m very, very tempted by this recipe from Jessica in the Kitchen.
  • Stuffed Roasted Butternut Squash – Butternut squash, veggies, rice… What could be better? It Doesn’t Taste Like Chicken is here to save the day.

  • Apple Crumble聽& Apple Spice Cake – Delicious & filling apple based desserts, with the perfect amount of spice.

Thankful Thursday: Thanksgiving Edition

Happy Thanksgiving everyone!

For this edition of one of my favorite recurring聽series – Thankful Thursday – We’re going to do a little Thanksgiving inspired twist on things to celebrate this fun, family & friend oriented holiday.

The 4th quarter is always a bit hectic for me, like many of you. It’s something about the combination of year-end madness at the office and the inevitable聽increase in social obligations, family holidays, travel, and more. It’s all fun and exciting and I look forward to a lot of it all year around, but it can also be stressful.

  • The opportunity to spend this year’s holiday with another family that I love

Am I the only one who heard the words “next week is Thanksgiving” this聽week and had a total meltdown?

Where did this year go??

I have been in a fog the last week and all I can say is that I seriously hope that a wonderful Thanksgiving celebration and getting out of my day-to-day routine will help me break out of this funk.

Thankful Thursday: Thanksgiving Edition

One of my favorite Thanksgiving traditions is going around the table listening as聽everyone says what it is that they’re most grateful for. So for this Thankful Thursday post I’m going to do a special Thanksgiving edition and share with you what I’m grateful for this year.

My family. This may sound cheesy, but it couldn’t be more true. My family is amazing and I love every minute I get to spend with them – I’m endlessly grateful for their love, support, and encouragement. And my favorite part of the holidays is getting to see them, spend time catching up, laughing, and planning out next adventures.

My home. I couldn’t love San Francisco more and I’m grateful that I have found such a wonderful place to live. Spending the Thanksgiving holiday in beautiful Napa County reminds me just how lucky I am to be a Northern California resident these days.
